Though both are referred to as starches, waxy maize starch and premium potato starch are still incredibly different to one another. Waxy maize starch has a larger molecular weight than other sources of starch, and as it has a long-chain molecular weight, it will pass through the stomach lining much quicker. This is useful as it helps draw nutrients from the stomach and digestive tract, into your system in general. Potato starch however, works by improving the digestive system instead.
